Homemade Carb-Free Spaghetti
Key Ingredients For The Healthy Version:
- Meat sauce – Organic, grass-fed beef
- Store-bought marinara – Organic tomato paste
- Pasta noodles – Sliced zucchini noodles

2 large organic zucchini’s slices with the sparooli
8 oz of organic tomato sauce (from a glass jar preferably) or puréed home canned tomatoes,
2 oz jar of tomato paste
2 lb of grassfed ground beef
2 oz of organic butter
1 small onion
Carton of chopped mushrooms
1 tsp of Stevia
1 tbsp of each: sea salt, pepper, red pepper, garlic powder, onion powder
Fresh grated Parmesan cheese
In a cast iron skillet sauté the ground beef in butter using salt, pepper, red pepper, garlic powder and onion powder to taste. Cook on medium heat until browned
In a medium saucepan sauté onion and mushrooms in butter. Once browned add tomato sauce and tomato paste. Fill the tomato paste jar with water to get a 1:1 ratio of paste and water and pour water in saucepan. Simmer on medium to low heat. Add stevia and herbs to taste. Add ground beef scraping the skillet to get the extra butter and fat for flavor.
Let simmer while making “pasta”
Toss pasta in olive oil and sea salt, pour sauce over noodles and top with chopped fresh basil or fresh grated Parmesan.
